What you’ll be doing

In this role you will support the Executive Head Chef and Sous Chef in the entire hotel food operation and supervise food production in all areas. You will help uphold the gross profit whilst maintaining the high quality of food production expected from our customers, assist in training and development of all team members in the kitchen and maintain standards of hygiene within department.

Supervisory duties

  • Work with the Executive Chef to implement goals and targets for Food & Beverage areas
  • Train and develop an effective Kitchen team to ensure that the operation will exceed Guest Service Standards as measured by GSS
  • Assist in menu design and/or implementation
  • Motivate and support associates to ensure the team is engaged

General Kitchen

  • Prepare all foods at the correct temperature according to the HACCP guidelines.
  • Follow and ensure compliance with food safety and handling policies and procedures, such as product rotation, First In-First Out (FIFO); dating, labeling, cleaning, and organizing coolers/freezers/storage areas; and Cold Chain compliance, across all food-related departments and areas.
  • Ensure the quality of the food items and notify manager if a product does not meet specifications.
  • Monitor the quantity of food that is prepared and the portions that are served to control food waste.
  • Check and ensure the correctness of the temperature of appliances and food using thermostats and thermometers, including monitoring freezer systems, such as fans, drains, and doors, for proper operation, and report issues or problems to facility management.
  • Report maintenance issues immediately to appropriate personnel (i.e., management or maintenance).
  • Maintain up-to-date knowledge of company Food Safety Programs within assigned area of responsibility, as well as all local and legal regulations.

  • Previous experience in a kitchen environment is a big plus (but not essential)

This role requires the ability to move and lift up to 25 lbs. Standing, sitting or walking for extended periods of time and ensuring a professional appearance in a clean uniform are also required.

This is a casual role which means you are part of a pool of workers who will be offered hours as required. You are under no obligation to work a particular number of hours in a week/month. The hotel is extremely busy and this is a fantastic opportunity to work with a dynamic and experienced team in a friendly and welcoming environment.
